El uso de biomarcadores espec\u00edficos puede ayudar a evaluar la ingesta de carne y pescado y mejorar la clasificaci\u00f3n de los sujetos de acuerdo con la cantidad y el tipo de carne o pescado consumido.<\/p>\n<p>OBJETIVO: Se aplic\u00f3 un enfoque metabol\u00f3mico para buscar biomarcadores de la ingesta de carne y pescado en un estudio de intervenci\u00f3n diet\u00e9tica y en sujetos de vida libre del estudio de Investigaci\u00f3n Prospectiva Europea sobre C\u00e1ncer y Nutrici\u00f3n (EPIC).<\/p>\n<p>DISE\u00d1O: en el estudio de intervenci\u00f3n diet\u00e9tica, 4 grupos de 10 sujetos consumieron cantidades crecientes de pollo, carne roja, carne procesada y pescado durante 3 semanas sucesivas. Se recogieron muestras de orina de veinticuatro horas durante cada per\u00edodo y se analizaron por cromatograf\u00eda l\u00edquida de alta resoluci\u00f3n-espectrometr\u00eda de masas. Las se\u00f1ales caracter\u00edsticas de la ingesta de carne o pescado se replicaron en 50 sujetos EPIC para los que se dispon\u00eda de una muestra de orina de 24 horas y un recuerdo diet\u00e9tico de 24 horas y que fueron seleccionados por su ingesta exclusiva o ninguna ingesta de ninguno de los 4 mismos alimentos.<\/p>\n<p>RESULTADOS: Un total de 249 caracter\u00edsticas espectrom\u00e9tricas de masas mostraron una respuesta positiva dependiente de la dosis a la ingesta de carne o pescado en el estudio de intervenci\u00f3n. Dieciocho de estas caracter\u00edsticas mejor predicen la ingesta de los 4 grupos de alimentos en las muestras de orina EPIC sobre la base de an\u00e1lisis de la curva del operador receptor parcial con pruebas de permutaci\u00f3n (\u00e1reas bajo la curva que oscilan entre 0,61 y 1,0). De estas se\u00f1ales, se identificaron 8 metabolitos. Se encontr\u00f3 que la anserina era espec\u00edfica para la ingesta de pollo, mientras que el trimetilamina- N -\u00f3xido mostr\u00f3 una buena especificidad para los peces. La carnosina y 3 acilcarnitinas (acetilcarnitina, propionilcarnitina y 2-metilbutirilcarnitina) parec\u00edan ser indicadores m\u00e1s gen\u00e9ricos de la ingesta de carne y carne y pescado, respectivamente.<\/p>\n<p>CONCLUSI\u00d3N: Los biomarcadores de carne y pescado identificados en este trabajo pueden usarse para estudiar asociaciones entre la ingesta de carne y pescado y el riesgo de enfermedad en estudios epidemiol\u00f3gicos.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Cheung, W., Keski-Rahkonen, P., Assi, N., Ferrari, P., Freisling, H., Rinaldi, S., &#8230; &amp; Gibbons, H.
