La ingesta inadecuada de grasas en la dieta, la ingesta excesiva de refrescos, la resistencia a la insulina y el aumento del estr\u00e9s oxidativo dan como resultado un mayor suministro de \u00e1cidos grasos libres al h\u00edgado y una mayor acumulaci\u00f3n de triglic\u00e9ridos (TG) hep\u00e1ticos.<\/p>\n<p>Una dieta rica en aceite de oliva disminuye la acumulaci\u00f3n de TG en el h\u00edgado, mejora las respuestas postprandiales de TG, glucosa y p\u00e9ptido 1 similar al glucag\u00f3n en sujetos resistentes a la insulina y regula al alza la expresi\u00f3n del transportador 2 de glucosa en el h\u00edgado.<\/p>\n<p>Los principales mecanismos incluyen: disminuci\u00f3n de la activaci\u00f3n del factor nuclear kappaB, disminuci\u00f3n de la oxidaci\u00f3n de las lipoprote\u00ednas de baja densidad y mejora de la resistencia a la insulina al reducir la producci\u00f3n de citocinas inflamatorias (factor de necrosis tumoral, interleucina-6) y mejora de la fosforilaci\u00f3n del sustrato-1 del receptor de insulina mediada por cinasa jun N-terminal.
