Zapat\u00f3n) sobre compuestos fen\u00f3licos bioactivos as\u00ed como sobre la actividad antioxidante. Los compuestos fen\u00f3licos se analizaron mediante HPLC-PAD-ESI \/ MS. La actividad antioxidante se determin\u00f3 mediante espectrofotometr\u00eda, evaluando la actividad captadora de radicales libres de las muestras.<\/p>\n<p>La germinaci\u00f3n produjo cambios significativos en los flavonoides y compuestos fen\u00f3licos no flavonoides. En las muestras analizadas se identificaron isoflavonas, flavonas y dihidroflavonoles en forma libre y conjugada. Los resultados obtenidos indican que la germinaci\u00f3n modifica la composici\u00f3n polifen\u00f3lica cuantitativa y cualitativa de las semillas de altramuz (Lupinus angustifolius L.) durante los diferentes d\u00edas del proceso, con un aumento significativo de flavonoides. Tambi\u00e9n se observ\u00f3 un aumento en la actividad antioxidante como consecuencia del proceso.<\/p>\n<p>Se demostr\u00f3 que la germinaci\u00f3n es un buen proceso para aumentar el contenido fen\u00f3lico de las semillas de altramuces, as\u00ed como su actividad antioxidante.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Due\u00f1as, M., Hern\u00e1ndez, T., Estrella, I., &amp; Fern\u00e1ndez, D.
