(2016). <a href=\"https:\/\/www.tandfonline.com\/doi\/pdf\/10.1080\/10942912.2015.1038720\">Phytochemical content, antioxidant properties, and phenolic profile of Tunisian raisin varieties (Vitis vinifera L.)<\/a>.\u00a0<i>International journal of food properties<\/i>, 19(3), 578-590.<\/p>\n<p>Se evaluaron cuatro variedades de pasas (Vitis vinifera L.), Chriha, Razeki, Assli y Meski, para determinar el contenido fen\u00f3lico total, el contenido total de o-difenol, el contenido total de flavonoides, el tanino condensado total, el contenido total de carotenoides y el contenido total de antocianinas.<\/p>\n<p>El potencial antioxidante se evalu\u00f3 mediante tres ensayos: capacidad de captaci\u00f3n de radicales de \u00e1cido 2,2-difenil-1-picrilhidrazilo y \u00e1cido 2,2&#8242;-azino-bis-3-etilbenztiazolina-6-sulf\u00f3nico y poder reductor f\u00e9rrico. Los perfiles fen\u00f3licos individuales se determinaron mediante cromatograf\u00eda l\u00edquida de alta resoluci\u00f3n.<\/p>\n<p>Los resultados revelaron que las cuatro variedades de pasas ten\u00edan un contenido fen\u00f3lico y una actividad antioxidante considerables. Chriha tuvo el contenido fen\u00f3lico total m\u00e1s alto (534,2 mg \/ g de peso seco) mientras que Meski tuvo un alto contenido de tanino condensado total (208,6 mg CEQ \/ g de peso seco), TAC (137 mg \/ 100 g de peso seco), contenido total de o-difenol (115,8 mg \/ g peso seco), contenido total de flavonoides (93 mg CEQ \/ g peso seco) y contenido total de carotenoides (33 mg \/ 100 g peso seco). Hubo diferencias significativas en el contenido fen\u00f3lico entre las cuatro variedades (p &lt;0.05).
